Kalia Chavez is the creator of our popular GF Almond Butter Cookies, made from CC101 biodynamic almond butter, coconut sugar and pasture-raised eggs and butter! Kalia comes from a family of foodies. She learned to cook from both her parents, and her father was a professional chef. She is now a private chef and baker of gourmet desserts, and the exclusive, in-house, resident baker at Culture Club 101.
Kalia’s baked goods also include cookies, cakes, pies, muffins and other delicious desserts or breakfast breads, made from an ancient heirloom flour called einkorn. A meal of einkorn wheat was discovered in the gut of Ötzi the Ice Man, whose frozen body was found in the Italian Alps in 1991. It was determined to be an ancient wheat very different from the modern wheat we have become accustomed to today. It is non-hybridized and very low in gluten, making it easy to digest for many with gluten sensitivities.
